Nightmare or Dream cookies?

So there once was a cookie that thought to itself why not be so complicated that it will drive people absolutely nuts but be so tasty that they can’t resist?
And the Macaroon was born.
My friend Daniela has been making them for a while and she tried to teach me yesterday. Now don’t get me wrong I am a good baker not Martha Stewart mind you but I have been baking from scratch for years now.  But these cookies are the most ridiculous pain in the ass ever.

So of course I researched the internet like crazy before I started these and I found out that you should let the egg whites sit for 24 hours before you use them.  Guess who forgot that little step? Yup me. 
Not only do you have to let the egg whites sit for 24 hours you also have to stir them a certain way, mix them a certain way and then let them sit for a least 25 minutes before you put them in the oven.  I have a little strainer and you are supposed to sift the powdered sugar and almonds so they are really fine and having a strainer the size of a button makes this a looooong process.

Putting the little cookies on the baking tray was fun though.

They look really cute and pink and I was starting to think that I had the hang of it….Yeah right! Dream on hag….
They looked like this after the oven. I used green food coloring on these and after all that work the completed cookie looked like a damn booger.

And the best part is that the cream cheese frosting that I made to fill these is also green. Lol what a complete fail.
I will still make these again because I think that practice makes perfect with these and they are adorable and perfect for gifts.
